So I was gifted with a pound of Sorachi Ace and a pound of Mosaic and wondering if anyone has some recipes that would make ample use of them.

The Lone Pint in Texas has something called "Yellow Rose" which is apparently a sMASh beer with a crap ton of dry hopped mosaic. Never had it but looks interesting.

Then there's a saison (been really wanting to brew one) called Brooklyn Sorachi Ace which, as the name would have it, uses a ton of Sorachi. Again...never had it being a Canuk.

If anyone has any other ideas (or brewed either of these), let me know!

My "house beer" is based on 'Mosaic Double IPA' in Gordon Strong's book "Modern Homebrew Recipes". It turns out a great beer.

Don't have that book - yet!

I did some digging, and here's what I think I'm going to try...based on my system's efficiency.

12 gallon batch
OG: 1.067 FG: 1.015 (bit high...but I think it might contribute to the juiciness?)
Abv: 6.8%

22lbs 5 oz Pilsner (Weyermann)
90 min mash @ 150F
90 min boil

1 oz Mosaic @ 60 min
1 oz Mosaic @ 30 min
1 oz Mosaic @ 15 min
4 oz Mosaic @ 10 min
2 oz Mosaic @ 5 min
4 oz Mosaic - whirlpool/hopstand held at 170 for 20 min

Ferment @ 65F - thinking of using WLP051 in one fermentor and US-05 in the other just to see the difference. I think Wlp051 might contribute to the "fruitness" of the Mosaic.

Primary until done

Dry hop 3 oz Mosaic for 3 days (following primary)
Dry hop 3 oz Mosaic (@ day 6)

Cold crash w/ gelatin at 34F - Package after 2-3 days.

Looks like a crazy hop schedule I know! But going for not so bitter, but smack you in the face notes from the Mosaic.

Any suggestions - i'd be open!
