I am planning on brewing a split 6 gallon blond ale / premium lager. I can cool wort to about 65 and will pitch a package of us-05 direct and then put the ale in the basement.
I have a fermentation chamber and plan to pitch 34/70 on the lager. How should I pitch the lager yeast? Cool wort down to fermentation temps, then pitch, or allow it to start at 65 and set temp controller to reduce temps to 52-54 over the first 24 hours?
Also, I have used 34/70 for some great octoberfests, but am considering using white labs Mexican lager. Can anyone offer a comparison of these two lager yeasts?
