|
|
I am wondering if leaving the beer on the yeast for 30 days vs taking the yeast out after primary fermentation via a conical fermenter....
Does leaving hte yeast down there for the 30days dramatically effect yeast health?
if so I might consider going conical in order to keep yeast healthier....
Doing some 6-8.5% stouts, milk stouts, seisons etc..
My brewing partner is super paranoid about yeast health and we have been doing 15 day ferments to safeguard yeast, we may be crazy...
thoughts?

If anything, the beer is protecting the yeast.

Each year, sometimes twice a year, I brew my Oktoberfest, Mai Bock and Dopple bock on the same yeast cake in the same fermentor. I brew and ferment my lagers doing the following: I'll brew 10 gallon batch Oktoberfest, ferment for 3 weeks then rack to secondary tanks for one to two weeks. After rack to secondary, I then rack 10 gallons of Mai Bock on top of the same yeast cake I just racked off of, I repeat 3 weeks later with a Dopple bock on top of the same yeast cake in the same fermentor. Beer and yeast come out great. So my yeast when lagering like this 9 to 12 weeks and doesn't seem to hurt anything. Its kind of building a large starter. I've also have done, 10 gallons Oktoberfest fest, 10 more gallons Oktoberfest, 10 gallons Mai Bock and 10 gallons Dopple Bock for 40 gallons of great beer on the same cake.
