If you have full control over your brewery room build, instead of building a fan speed control box per these instructions, consider using an industrial KBWC-15K fan control from KB Electronics installed directly in the wall beside the control panel:



This is what I did when we built our new brewery in 2013. It installs in a standard 1-gang box like any light switch. This fan control feeds an outlet hidden above my hood to power the Vortex fan. I've been using it for a year and a half now and it works great. The stainless finish also looks a lot nicer than what I had before. Wink

I'm not sure I follow. You mean how do you wire this to drive an outlet that you plug your fan into? The unit comes with complete wiring instructions. As always, any wiring that is attached to your house should be done by a certified electrician. Any electrician would be able to wire this up without following instructions. It's basically wired up like a light switch that controls a light fixture.

Ah! Gotcha. I should have realized that. It's the same as this diagram here:



Just pull out the 3-speed fan switch and put in the one I recommend here. The only difference between the two is that one is 3-speed and the new one is variable (and shiny stainless Wink).

If wiring as part of your house wiring you won't have a plug of course - you'll be off a circuit breaker.
