I adapted this recipe to the electric brewery (tweaked the efficiency and made some adjustmensts here and there).

White Labs - Bitch Wit

Used a little extra orange peel and coriander.

And I couldn't get the WLP410 yeast (out of season), so I opted for regular WLP400.

OH MY! THis is a really nice Belgian Wit. Fruity.. hint of spice... I really love it.

White Labs Bitch Wit


6 gallon Recipe
85% efficiency plugged into BeerSmith2
5% ABV (actual)
Color = 3.8 SRM
Bitterness = 14 IBUs

Grain and Adjuncts

4 lbs Belgian Pilsner 2-row
3.5 lbs White Wheat Malt
1.25 lbs Flaked Oats
4 ounces Biscuit
.65 oz Styrian Goldings (Whole) - 60 min
.5 oz Czech Saaz (whole) - 15 min
0.75 oz Bitter Orange Beel (5 minutes Boil)
.75 oz Coriander (toasted in fry pan for 60 seconds)
.25 oz Chamomile Flowers (can find in supermarket near hispanic spices or near teas)
Added 1

1 vial WLP400 (used 1 1.3L starter)


Note: Adjust hop schedule based on actual alpha's of hops used.
Note: The WLP400 byproducts smell like baby vomit. It dissipates. Don't worry.


Step Mash

122 degrees 20 minutes
148 degrees 45 minutes
154 degrees 15 minutes
Mashout at 168 degrees

Ferment at 68 degrees for first 24 hours, then 70 for 1 day and then 72 to finish fermenting

Let sit for 10 days total or so. You can try and get some of the yeast and trub out of the primary fermenter (but most of the yeast is suspended).
